Nothing says comfort on a cold day like a warm bowl of beef and noodles. This is the perfect weeknight meal to make in a pinch with an instant pot or add to crockpot in the early afternoon and have ready for supper. I tend to run out of ideas for what to do with our homegrown beef for stew, and this is a great option. You could substitute beef tips, chuck roast or even ground beef and have an equally delicious meal. Try adding some sour cream at the end to make it even creamier. Easy Instant Pot Beef & Noodles
The perfect comfort food and weeknight meal, ready in no time with an instapot or let a crockpot cook for you all afternoon.

- Saute beef with olive oil in instapot until seared. (This could also be done in crock pot or stovetop – just sear the meat beforehand in skillet.) This step isn't mandatory, but helps.
- Add other ingredients and cook on high pressure for 30 minutes.
- Try adding ½ cup sour cream to make creamier or top with sour cream and chives per serving.
- If you want thicker sauce, mix a few teaspoons corn starch or flour into small amount of cold water, stir in and saute until thickened.
- Serve over cooked egg noodles or add egg noodles to finished beef, set to saute and let cook 10 minutes or until done.
