Cast Iron Pizza : Easy as Pie

Some weeks are crazier than others and this one has been on the scale of 11/10. All good stuff going on, just lots of it at one time and trying to sort it all out can stretch my brain…to which my husband has a lovely saying for (leaving that one for the vlog).

In the same breath, it was also a good week to stretch some pizza dough and my cast iron repertoire. Watch this week’s video for my take on cast iron pizza and how never saying never is always a good idea. Because life and pizza are kinda the same…well, that may also be a stretch, but you’ll get it once you watch. I hope. And always, always cheese makes everything better – even if you don’t have the right cheese. But is there really a “wrong” cheese? I think not. Capisce? (I googled that, so I hope I’m both spelling and using it correctly.) If not, “scusa me.”

Cast Iron Pizza

Ingredients
  

  • 1 Cast Iron Pizza Dough
  • 1 lb sausage, browned and drained
  • 1 can tomato sauce 8 oz.
  • 1 small onion, sauted with sausage
  • 1 bell pepper or several mini sweet peppers, cut and sauted with sausage and onion
  • 1 tbsp italian seasoning sprinkle over top of meat and veggies
  • 1 cup mozzarella cheese

Equipment

  • Cast Iron Skillet

Method
 

  1. Make pizza dough and let rise while preparing toppings.
  2. Saute onion, peppers and sausage. Drain.
  3. Spread dough into slightly greased cast iron skillet (can use any size – larger the skillet, thinner the dough.)
  4. Pour tomato sauce evenly over dough and spread meat and veggies over.
  5. Top with italian seasoning and cheese.
  6. Bake at 425 until browned and bubbly.

Easy Peasy Pizza Dough

Ingredients
  

  • 2 c White Lily Bread Flour (or any all purpose flour)
  • 1 tbsp live active yeast
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 2/3 c lukewarm water

Method
 

  1. Mix 1 cup of flour with all other ingredients.
  2. Add only what you need of 2nd cup of flour to form a “loose” ball – for best results, USE YOUR HANDS. Embrace it, it’s fun!
  3. Let the dough rest 10-15 minutes in a covered bowl, after rolling the ball in a little EVOO (that’s extra virgin olive oil – it’s extra good) OR put the bowl in a 200 degree warmed oven that you TURN OFF after it reaches 200 degrees.
  4. Spread out onto your choice of pizza pan or pizza stone (I also like to sprinkle a little corn meal on my stone to keep the crust from sticking) and add your favorite toppings
  5. Bake at 375 degrees for around 15 minutes or until bubbly. Take out of oven. Eat.
